Yippeeeeeeeeeeeeeeeeeeeeee! I am done typing and nearly done proof-reading. I only have my recipes to do, so 80% of the proofing is done. I *might* add a few drink recipes in to fill out that category, but I'll see how I feel about it when I'm done with this task.

My quilt guild came out w/ a cookbook a year ago. I was on the committee. I think we had 400 recipes, but there were six of us to type it up & four of us to proofread.
Hamster, I will post a few from the book the next time I am at my own computer, since I've been posting from DH's laptop lately.
DQM - no fish recipes, sorry! I do have one for a warm crab dip, though.

MomHD - I can feel them now, but I did have to wear my wrist brace on Tuesday! My wrist and thumb were killing me! Of course, after I finished on Monday night, I crocheted for about 2 hours, along with posting on the ZetaBoard, so that was not the smartest move!

I have a ton of fish in my freezer but it's mostly trout. All my fish recipes are for shrimp, cod, and other whitefish. I usually just bbq trout but I'm looking for at least one other way of cooking it.
8 Tbsp. creamy peanut butter 1 c. brown sugar, packed
½ c. granulated sugar
1 large egg + 1 yolk
2 tsp. vanilla extract
1½ c. peanut butter chips
Preheat oven to 325° and line cookie sheets with parchment paper.Whisk together dry ingredients; set aside.Mix butter, peanut butter, and sugars until thoroughly combined.Beat in egg, yolk, and vanilla until combined.Add dry ingredients and beat at low speed just until combined.Stir in chips.Roll scant half-cup dough into ball; with fingertips, pull ball into equal halves.Place jagged-side up onto cookie sheet.Bake, reversing position of cookie sheets halfway through, about 17 minutes.Cookies should be light golden brown with outer edges starting to harden while insides remain soft and puffy.Cool cookies on sheets until they can be removed without breaking, then transfer to a wire rack.
Chili Cheese Dip
2 15-oz. cans chili, no beans
8 oz. cream cheese, cubed 8 oz. hot pepper cheese, cubed
6 oz. cheddar cheese, shredded
Preheat oven to 400°.Lightly coat 8 x 8-in. glass baking dish with cooking spray.In large bowl, mix chili, cream cheese, and pepper cheese together.Transfer to prepared baking dish and top with cheddar cheese.Bake for 30 to 35 minutes or until cheeses are melted and bubbly.Stir to incorporate cheddar into dip and serve with a sturdy dip or cracker.
Ranch-Parmesan Chicken
6 boneless, skinless chicken breasts
1 c. Italian bread crumbs
¼ c. Parmesan cheese
1 tsp. seasoning salt ½ tsp. black pepper
½ tsp. garlic powder
1 c. Ranch salad dressing
Preheat oven to 400° and lightly grease a 9 x 13 baking dish.In a shallow bowl, mix together the breadcrumbs, cheese, salt, pepper, and garlic powder.Dip chicken into the ranch dressing to coat both sides, allowing any excess to drip off.Coat in the breadcrumb mixture. Place in a single layer in baking dish and bake for 30 to 35 minutes or until chicken is cooked through.

Cherry Bread
1 c. sugar 2 c. flour 2 tsp. baking powder ½ tsp. salt ¼ c. nuts z. jar cherries, halved 1 egg, beaten Juice from cherries, plus water to make 1 c. 4 Tbsp. butter, melted
Mix sugar, flour, baking powder, salt, nuts, and cherries in a large bowl. Make a large hole in center of bowl and add egg and juice. Mix well, then add butter. Stir only to mix. Bake at 350° until toothpick comes out clean. Makes 1 large loaf or 4 small ones.

It's simple to pan-fry trout but that's how I like it best. Roll in seasoned flour and fry in butter. Or bacon fat, though I like butter best, then serve with some lemon slices to squeeze over the fish. Some people use cornmeal instead of flour.
:sad: frying fish makes me sad. I try to avoid frying almost anything but fried fish is heart breaking.
I've had fried catfish and I agree that it is delicious but I feel so guilty taking something so good for your heart and cooking it in oil or butter.
I prefer to bbq or bake my fish or even put it in soup. My family won't eat it in soup so I have to be careful to only make enough for one or two servings which means I have to cook something else for everyone else. That's the reason my freezer is filling up with fish. Everytime my friend goes fishing he brings me a couple and I never have time to eat them.
