Good Healthy Muffin recipe

These are very good! Moist and sweet. And there is enough stuff in there to make the whole grain flour taste less obvious.

 

And here's where I list the changes I made, lol:

Instead of raisins, I used dried currants, since I had them and didn't have raisins. I probably used closer to 1 cup than 1/2 cup.

 

Instead of cinnamon, I used Penzey's Baking Spice (which contains cinnamon). I used 2.5-3 tsp.

I also added 1 tsp of Almond extract (again, Penzeys).

 

I filled 12 muffin cups, then I filled a large silicone muffin cup. So for me, it makes more like 14 muffins. Maybe because of the extra currants and I also used 1/3 cup sunflower seeds, which are listed as optional?

The recipe sounds good, except for the raisins. I just don't like raisins in baked goods. I think I would try dried cranberries or cherries.

I generally don't care for raisins either, unless they are covered in chocolate! I subbed dried currants. I think any dried fruit would be good. I love to put blueberry Craisins in muffins. They are cranberries soaked in blueberry juice. They are sweeter than cranberries, but not as sweet as blueberries.
