American Thanksgiving, Hannukah, Christmas, Winter Solstice, and Kwanzaa are coming up, so let's share those special recipes that we only dust off this time of year!

I suggested to my sister that we try a new recipe for Thanksgiving and suggested cranberry souffle. She just said,"NO". It looks intriguing.

Cranberry Soufflé...from the kitchen of One Perfect Bite

Ingredients:
1/2 cup fresh cranberry purée mixed with 1/2 cup of granulated sugar
1/2 cup of sugar, plus another 1/2 cup for coating soufflé dishes
2 tablespoons butter, softened
4 egg whites

5 (6-oz.) soufflé dishes

Directions:
1) Preheat oven to 325 degrees F.
2) Puree cranberries and mix with 1/2 cup sugar in a medium sized bowl. Set aside.
3) Using a pastry brush, generously coat soufflé dishes with butter, then coat them with 1/2 cup sugar. Turn them upside down to remove excess sugar. Set them on a baking sheet.
4) Quickly beat egg whites with a pinch of table salt, adding a 1/2 cup of reserved sugar a teaspoon at a time, until soft peaks are formed.
5) Fold whites into cranberry purée. Spoon batter into soufflé dishes. Bake for 25 minutes. Serve immediately with whipped cream, or vanilla ice cream. Yield: 5 servings.

Peppermint Swirls


1 c. butter or margarine, softened
⅓ c. powdered sugar
1 tsp. vanilla
2 c. all-purpose flour
¼ tsp. peppermint extract
¼ tsp. red food coloring
2 Tbsp. granulated sugar

Heat oven to 350°. In a large bowl, beat butter, powdered sugar, and vanilla with electric mixer on medium speed or mix with spoon. Stir in flour. Divide dough in half. Stir peppermint extract and food color into one half of dough. Divide each dough color in half. On surface generously sprinkled with flour, shape each piece of dough into a rope 12 inches long.

Place 2 ropes, 1 red, 1 white, side-by-side. Twist ropes. Repeat with remaining dough. Cut twisted ropes in ½-inch pieces; shape each into ball. On ungreased cookie sheet, place balls about 1 inch apart. Flatten to about ¼-inch thickness with greased bottom of glass dipped in granulated sugar. Bake 7 to 9 minutes or until set. Remove from cookie sheet to cooling rack.

Baker’s Note: Try substituting different colors and flavors for different occasions!

Ooh, these are going on my to-bake list!

Eggnog Cookies
Cookies:
1 1/4 cups white sugar
3/4 cup butter, softened
1/2 cup eggnog
1 teaspoon vanilla extract
2 egg yolks
1 teaspoon nutmeg
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
Eggnog Glaze:
1 ½ cup powdered sugar
3 tablespoons eggnog


Directions:
1. Preheat oven to 300°F (150°C)
2. Combine flour, baking powder, cinnamon and nutmeg.
3. Cream sugar and butter until light
4. Add eggnog, vanilla, and egg yolks; beat at medium speed with mixer until smooth.
5. Add flour mixture and beat at low speed until just combined.
6. Do not over mix
7. Spoon onto un-greased cookie sheets or parchment paper and make the dough balls rather small, they will spread generously in the oven.
8. Sprinkle lightly with nutmeg.
9. Bake 15 to 18 minutes or until the edges barely start to brown.
10. While cookies are in the oven, make the eggnog glaze by whisking together the powdered sugar with 3 T eggnog.
11. Gaze your cookies warm or cooled and top with cinnamon.

Since my dad is diabetic, I am the self-appointed provider of low-carb Tgiving and Christmas options.

Low Carb Dressing

This is made with onion, celery, cabbage and egg. I use a sage sausage. While it will definitely not "fool" you into thinking it is bread or cornbread dressing, it is very good and goes well with turkey. I also add a teaspoon of poultry seasoning.

Cheesy Bean Bread

1 15 oz. can great northern beans (drained & rinsed)
4 large eggs
1 tsp. baking powder
2 Tbsp oil
1/2 teaspoon seasoned salt (I use Lawry's)
4 ounces of shredded cheese (I like to use Cabot's Seriously Sharp cheddar)
Optional: Chives or jalepenos.

Preheat oven to 350.

Put all ingredients in a food processor and blend until smooth.

This will fill 1 8x8 pan or 10 muffins. Bake at 350 for 25-20 minutes or until knife comes out clean.
