Spiff off of the healthy meals thread - how do you get your veggies?
On of my favs is roasted brussel sprouts. If you hate them boiled or steamed, try them roasted!
Actually, I roast most vegetables. I also like to get the bag of brocolli cutlets (cheaper than brocolli florets), toss them with some salt, Parmesan cheese (the kind in the can) and some dijon mustard.
I don't like those veggies you steam in the microwave. I mean, I'll eat them if somebody else is cooking, but I don't like them.
One really good sauce is to melt a little butter, then mix in some lemon juice and some steak seasoning, then toss your veggies in that.
Raw cabbage is another favorites. I don't like lettuces like arugala, etc, I think they are very bitter. But I like cabbage.
There are vegetables I like a lot but eating them regularly is a different story.
I like brussels sprouts too. I usually stir fry/saute them. I like broccoli, cauliflower, beets, spinach, kale, chard, collards, sweet potatoes, bitter melon, zucchini, spaghetti squash, eggplant, artichokes and others. Most of these I don't eat that often and most vegetables I cook at home I stir fry or pan fry.
I try to make sure we have a vegetable dish every night. We have roasted vegetables regularly. Sometimes it is just potatoes, carrots and zucchini with olive oil and onion soup mix; sometimes it's a fancier assortment with seasonings from a recipe.
I use fresh cauliflower, eggplant and asparagus regularly, but for ease of preparation, the frozen veg with sauce work just fine for us.
I definitely found that I like roasted vegetables better than steamed ones. They are crispy and not soggy.

I eat a salad everyday from our salad bar at work and try to incorporate at least 4 or 5 vegetables, including the salad greens. I feel if I have that one salad a day, I've probably hit all my daily requirements for vegetables.
I grew up vegetarian and eat any and all vegetables except for peas. I am mildly allergic to them. I will still eat pea pods. They don't seem to bother me.
I like them grilled, roasted, sauteed, stir-fried and even lightly steamed in broth. I do not eat boiled vegetables except for corn, which I prefer grilled on the bbq.
I make them into gratins, soups, sauce them, spice them up, and even stuff them. I like a lot of vegetables just raw.
We were having a hard time getting in 5-7 servings of vegetables in a day so I started to make huge pots of vegetable soup for lunches. Now the warm weather is here, I am switching to salad, but dh will still eat the soup daily.
I like sweet potato fries, potatoes baked, or au gratin or french fried haha or hash browns. I like carrots raw in salad or dipped in ranch. I like broccoli cooked with cheese on top or in salad raw or dipped raw in ranch. I like lettuce, tomatoes, peppers, carrots, broccoli and mushrooms in salad.
I like tomatos and lettuce in mexican food. Love me some fajitas or stir fry with lots of veggies.
About the only vegetable that I LUV is broccoli (as long as there's NO cheese on it... broccoli and cheese? BLECH!). I could eat broccoli ever day, twice a day, and never get tired of it (matter of fact, a few years ago, I actually DID eat it once a day every day for just over 6 months.... long story).
I like all the varieties of beans I have ever tried, but wouldn't necessarily want any of them daily.
Corn is pretty good... either canned or still on the cob. I like home made creamed corn... but not creamed corn that's bought, in the can, already creamed.
Carrots are "o.k."... as long as they are NOT cooked. I like them "crisp, crunchy, and COLD".

I like most vegetables - except brussel sprouts (bitter) and spaghetti squash (soggy, tasteless and nasty).
Are beans considered veggies? I always considered them protein family. I eat a lot of refried beans, pinto and black beans. I make a bean chili which is basically bean soup with kidney beans, chili beans, black beans and tomatoes. It is really good. I love Mexican food so I am all about the beans.
Right now in my fridge and pantry I have: zucchini, sweet potato, tomatoes, cucumber, 2 kinds of lettuce, radish, peppers, 3 kinds of onions, avocado, cabbage, spinach, and corn in the freezer. We have finished the broccoli, cauliflower, mushrooms & brussel sprouts already this week.
I am looking forward to tomatoes being in season here. Nothing better than a fresh tomato sliced with some basil, or eaten like an apple. Carrots and fresh spinach are good, cooked greens, broccoli or cauliflower are not going on my plate.
How things have changed! I remember when my father was put on a 'heart healthy' diet in the 80s and discovered that corn did not count as a vegetable. He never made the leap to having broccoli, cauliflower or that other stuff, though.
we pretty much always have cauliflower, carrots, snap peas, mushrooms, peppers, spinach, onions, tomatoes, cucumbers (even though they're technically fruit :) )
Other vegetables that frequently (couple times a month) appear in the fridge are broccoli, fennel, kale, avocado, bok choy, various lettuces.
Every couple month we'll have eggplant, zucchini, squash, parsnips, turnip, brussel sprouts (my favourite, but I'm the only one in the house who loves them), cabbage. I'm probably missing some... There's not a lot that we don't like...
I do love a good eggplant parmesan but the only way I eat it. Same with okra. Loved fried okra with ketchup but otherwise will not eat it. I love creamed corn or corn on the cob yum.
I've tried okra in indian food and liked it, but when I tried fried in the south I didn't care for it at all. All I could taste was grease and the texture was slimy. maybe I just had a bad dish?
I only like bhindi (Indian okra) done the proper way to remove the slime. Sliced lengthwise. Cut the other way, not enough of interior is revealed to remove the slime.

I hate okra in gumbos. I sometimes don't mind it fried as long as it has been dried to remove the slime.

I may be Southern... and I know it's (supposed to be) a "Southern Delicacy"... but I DETEST Okra. There is not a single way it can be made (that I've ever seen, heard of, or tasted) that makes it palatable to me.

We've got Indian housekeepers that live "on property"... and they bring me Indian Cuisine to try (I'll try anything food related... how else do you know if you like it or not?) all the time
They made some once the way Ana described, and brought me some. It wasn't slimy... I'll agree with her on that. It still tasted nasty though.

I also approach okra with caution and like it only sometimes, when it's not too slimy. I've had and liked it in Indian food and US Southern food.
I like eggplant but when it goes wrong it can be quite horrid as well.
A large percentage of my veggies are frozen. It's usually a better deal price-wise, they're already chopped, and they retain more nutrition being frozen than they do during the trip from the farm to the store.
My exception to this is green beans. They get this weird sweet/funky taste that I can't stand. I eat green beans either fresh or canned.
Just had a Middle Eastern eggplant, potato, and tomato stew served over rice from our company cafeteria. It was delish! Plus, it was listed as "heart healthy" on the menu.
