Original recipe

I really prefer oven pot roasts to crock pot ones.

3-lb chuck roast

1 large onion, chopped

1 Green pepper, chopped

2-3 celery ribs, chopped

2-4 carrots, chopped

1 can Italian stewed tomatoes

2 T Worstershire

4-5 teaspoons prepared mustand (I used Dijon)

3 garlic cloves, minced

1 T soy sauce

1 cup water

1/4 cup red wine (I used Pinot Noir)

Preheat oven to 350.

In a cast iron dutch oven, heat oil and brown roast on all sides. Mix all other ingrediants, then put them in the Dutch oven. Cover. Bake for 3.5 hours.

 

ETA: 3 T corn starch.

I am with you I prefer a roast in the Oven, and in oven bag (delicious and so tender and juicy) to a crock pot one

That does sound good. The reviews on taste of home are almost all positive, too. It looks like you omitted the brown sugar? I would have too.

I omitted the brown sugar and the ketchup, b/c those sounded too sweet to me. And I omitted the beef broth b/c I couldn't find it! I found this very flavorful, and I think with the beef broth it would have been too salty.
