I've always used Julia Child's recipe, but I may try the one KattyKatzz posted sometime next weekend, so I can see how the oven browning works on the onions. It looks delicious in the pictures.
When you are slicing the onions, it does seem to help when you burn a candle right next to the cutting board.
Hey, Evil. When Hubby and I were first married we were using candles to create a romantic ambience. When I cut onions and he came into the room I pretended to be sobbing. He said, "What? What?" I said, "You're such a beast!" and then "Ha-ha."
Are you that evil?
Edited to punctuate and use quotes properly.

Hey, FRAED. An onion is an onion is an onion. No onion lover is going to turn down onion soup. That includes my fabulous leek and potato soup. Let me know if you want the recipe - another arrow for your husband-loving quiver.

Use sweet onions like Walla Walla sweets or Vidalia. The slower you carmelize the onions the better. It takes me two days to make my onion soup.
Two days? hmmmmmm
not sure I like DH that much. LOL! JUST KIDDING!
I do know he likes vidalia onions the best...maybe I'll try them.
After I (really DBF) carmelize the onions, I add the other ingredients, then I put everything in the refrigerator overnight and finish it the next day. That give the flavors more time to meld together.

Many soups and stews benefit from letting the flavors meld like that. Alice, do you add sugar when carmelizing your onions?

Sure! I'll try your recipe. Thanks!
I'll see what I can do. The slave drivers I work for are putting a serious cramp into my futzing around on the internet time!
This thread is giving me cravings for it too. I'm going to make some Saturday. It won't be hearty enough by itself for my guys though. Would reubens be good with onion soup?

I don't see why not. DH will need something besides soup too. In fact, I'm sure he'd love a reuben.
Will you be able to eat any of the soup yourself if you don't actually put onions in your bowl, Fraed? My sister doesn't like the texture of onions, but the flavor it gives dishes doesn't bother her.

Yes! I don't mind the taste - just the onions.
I don't like the crunch of raw or the slimey-ness of cooked. blech!

Can you make enough for us onion-loving peeps? I bet you share.
Anything goes well with onions as long as you don't be hatin on the onions.
I tried the recipe KattyKatzz linked to and it was pretty good. I like Julia Child's better, but it is finished with a little brandy and DH doesn't like alcohal in his food, so he liked this one better. It was easy to carmalize the onions in the oven, but it took even longer than the recipe said because I didn't have a big enough dutch oven.
