I DO NOT like onions. At all. Period.
The quickest way to get me to stop eating is to put an onion in my food. gag, choke, hurl

 

But DH loves onions and I want to be a loving wife who makes food he enjoys. biggrin

Therefore, I would like to make him onion soup.

My question for the peeps is: what is the best type of onion to use when making onion soup?

I do have a recipe at home that I will try, but if anyone has one they've had success with, please feel free to share.

I'd use yellow onions.

Carmelizing onions takes forever. Cooking them in the oven in a dutch oven cuts down on the man-power. Here's a recipe for that version.

Hey, FRAED. An onion is an onion is an onion. No onion lover is going to turn down onion soup. That includes my fabulous leek and potato soup. Let me know if you want the recipe - another arrow for your husband-loving quiver.

Use sweet onions like Walla Walla sweets or Vidalia. The slower you carmelize the onions the better. It takes me two days to make my onion soup.

After I (really DBF) carmelize the onions, I add the other ingredients, then I put everything in the refrigerator overnight and finish it the next day. That give the flavors more time to meld together.

 Many soups and stews benefit from letting the flavors meld like that.  Alice, do you add sugar when carmelizing your onions?

I make DBF cut the onions. He also is responsible for carmelizing them. He has never tried that trick.

That would be great. Onion Soup is delicious, but cutting and sauteing them is really stinky work!

This thread is giving me cravings for it too. I'm going to make some Saturday. It won't be hearty enough by itself for my guys though. Would reubens be good with onion soup?

I think reubens would go nicely with onion soup. Of course, I love onion soup so I think almost anything goes with it.

DH will need something besides soup too.

Will you be able to eat any of the soup yourself if you don't actually put onions in your bowl, Fraed?
My sister doesn't like the texture of onions, but the flavor it gives dishes doesn't bother her.

 Yes! I don't mind the taste - just the onions.

I don't like the crunch of raw or the slimey-ness of cooked. blech! bleh

 I tried the recipe KattyKatzz linked to and it was pretty good. I like Julia Child's better, but it is finished with a little brandy and DH doesn't like alcohal in his food, so he liked this one better. It was easy to carmalize the onions in the oven, but it took  even longer than the recipe said because I didn't have a big enough dutch oven.
