I'm bored with my current meals, and want to try some new one. Opinion do need easy meals because I am not a good cook and quick because we are crazy busy. Anyone have a favorite that mets those qualifications?
Have you thought about going to the library and checking out books?
If I have a certain ingredient, I will google it. For instance, I have my veggies delivered. One week it was golden beets. I had no clue, so I googled, "golden beet recipes". Voila!
Cut beets into wedges. Toss with crushed rosemary & sea salt & a couple tablespoons of olive oil. Spread out in single layer on baking sheet lined with parchment paper. Roast in oven at 400 for 30-40 minutes. Turn each wedge every 5-10 minutes or so.
Can do the same with potatoes. Fingerlings sliced lengthwise are the easiest.
I don't usually go for "quick" recipes b/c they use shortcuts like pre-chopped veggies. My preference is to make things that take a little longer, but that can be altered and eaten for more than one meal.
For example, if I make tacos, and we have leftovers but not quite enough for tacos, I will make southwestern omlets.
Do you have good tomatoes yet where you are? We are eating a lot of BLTs. One thing that makes this easier is doing the bacon in the oven. Line a cookie sheet with foil (you want the kind of sheet that has raised sides, sometimes called a jelly roll pan), put your bacon on it, put it in the center rack of a COLD oven (this is key) and turn the oven on 400. It takes 17-20 minutes. I set the timer for 15 minutes and then check on it until it's done.
Ophelia that sounds delicious!!! I'll have to grab some bacon this weekend to do that... We have fairly good tomatoes all year long. Have you seen the bacon mesh on pinterest? I'm going to do that before getting it on the oven.
I have a dumb question what does BLT stand for? I'm not in the US so i have no idea :P
Heat the olive oil on medium heat then throw the onion and cook until is tender, cut the thin steak in thin strips and put them on the skillet once the onions are tender. Once the meat starts changing color put the sauce in it and cover. Once the meat is almost done put the bell peppers in there along with the cheese, cover again. Once the cheese has melted it's ready to serve, we like it with the peppers still a little crunchy. You can have it just like that or serve it with tortillas. It's pretty much fajitas now that I think about it LOL.

Carbs are my downfall and I need to cut them ASAP so an open face sandwich is a great idea!
Me too. And my dad is diabetic, so the whole family is cutting down on carbs. I make a lot of lettuce wraps. I love them, but he can't make them work. I have no idea how a person with thumbs cannot manage to hold a lettuce wrap, but he can't do it.
Here's my recipe for Asian lettuce wraps:
1 pound ground meat (I used venison)
Whole lettuce leaves
1 tablespoon cooking oil
1 large onion, chopped
4 cloves fresh garlic, minced
1 tablespoon soy sauce
1/4 cup hoisin sauce
4 teaspoons minced ginger (available in a jar in Indian and Asian groceries)
1 tablespoon rice wine vinegar (I used seasoned rice vinegar. I think any vinegar besides distilled white would be okay.)
Asian chile pepper sauce (I didn’t have any of this on hand, but I think it would be yummy)
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped (I left these out b/c I hate green onions)
2 teaspoons Asian (dark) sesame oil (I used toasted sesame oil)
1-2 cups shredded vegetables (I used some diced green bell pepper, frozen shelled edamame and broccoli slaw, b/c that’s what I had on hand. If you don’t want to add any veggies, cut the amount of ginger and garlic in half.)
Brown the ground meat and set aside. Drain if necessary, reserving a tablespoon or so of the fat to cook the rest of the ingredients. If you used a lean meat, cook the onion, garlic, soy sauce, hoisin sauce, ginger, vinegar, chili pepper, water chestnuts, green onions and vegetables in 1 tablespoon of cooking oil.
Mix the meat and the vegetables and add the sesame oil. You may want to add a little more soy sauce.

You can do it with anything. You can use taco fixings and have lettuce instead of the taco shells. I have also done it Italian style and topped it with mozzerella and fresh basil.

That sounds amazing. And we are just about to get some venison. I'll try it, thank you. I like trying recipes that other people have made and liked. I never know how a recipe in a book will turn out.

One of these ingredients may hard to find but it is so worth it. Cut the following into slices as thin as you can cut them. Potatoes can be cubed. 3 medium potatoes. 1 package chourico (a spicy Portugese sausage) 1 package sweet Italian sausage. 1 tablespoon canola oil and one 1/2 cup of water (onions and peppers are optional). Toss all in a large baking dish and cook for an hour and 30 minutes. Serve with a salad and crusty bread.

I made the BLTs yesterday and they turned out yummy!!! We loved them, we had them for sunday breakfast and they were very filling and very good. DH bought a ton of bacon, and that means I need more recipes for bacon LOL. Also does bacon freeze well?
Raw bacon freezes well. I have never frozen cooked bacon. I don't really have many bacon recipes b/c we usually just cook it and eat it! (see my Bacon Grease thread, lol)
I got this recipe from the Sweet Potato Queens book. I have never tried it, but I really want to! It's called "Pig Candy" and you sprinkle the bacon with brown sugar and chopped pecans before baking it.
Made it last night. I'm not wild about it, personally, but mom and dad really like it. It's low carb. I use ground venison, since we have a freezer full and I am always looking for new ways to use ground meat. I added a little brown rice to mine.
