A few months ago my mother in law introduced me to one of her friends who stopped by when MIL was here at the barn.  During our conversation she asked if I had ever canned in the oven.  I told her I hadn't and that I didn't think it was considered safe.  It is not recommended by the Department of Agriculture or any canning authorities.

MIL was telling her husband about it and I told her again it is not a good idea.  He said he was not eating anything she canned in the oven.

Today that same lady came by to get pick some tomatoes and left two jars of salsa as a thank you for the tomatoes she got a week or so ago.  I don't know how she processed it, though.   I know absolutely nothing about her cooking standards other than the fact that she bakes home canned tomatoes in the oven.  If it is something she made within the last week or so it's probably ok, but I don't know when she made it.  Would you eat it?

I'm a VERY picky eater when it comes to things prepared by others... in most cases, I say "thanks", and then as soon as possible without them knowing about it... I deposit their offerings into the closest "circular file", or dump it in the nearest toilet... depending on what it is, and whether or not they expect their container back.

The "circular file" is where I'm leaning too, Richard. Home canned food can be dangerous if not prepared properly.

I suppose if I am a "risk taker" in anyway, it's with food. I LOOVE me some raw cookie doe! With the tomatoes and the lemon or lime juice in salsa, it's pretty acidic. I, personally, would try it, but I wouldn't encourage anybody to go against their own instincts in this matter. A low acid food that is trickier to can, I might not. Well, to be entirely honest, if it was really tempting like pickled peaches I probably would.

Back in the olden days when I was a child we always ate raw cookie dough and fought over the spatula and beaters when our mother made cakes. Raw eggs never scared me, but botulism does.l

My doctor cousin likes to regale me with tales of kidney failure while I use a silicone spatular to squeegee every drop of cake batter from the bowl. Makes it all the sweeter!
