Yesterday was good. Walked 1.2 miles yesterday morning, did a video in the evening. I did have a Mountain Dew and a bag of chips, but I was still under my calories for the day. I was very good for dinner - 4 oz of steak, brocolli and canteloupe.

Cantelope - another reason I can't do low-carb in the summer!

BTW, I like to toss my brocolli in Dijon mustard and Parmesan (from a can) and a little olive oil. Cook at 350 for about 30 minutes. I cook it covered, then remove the cover for the last 5 minutes or so. Tasty and low-carb.

 I'm not being strict about calories, however I've been around 1500. 

They say that when get into ketosis (the state where you start burning fat instead of the carbs you eat) you have a sweet taste in your mouth and I started getting it today, so I believe it's working!

you guys are all doing great. and what is nice to see is you are not taking it to the extreme and starving. but more modifying your regular lifestyles and choices in ways you can maintain! congrats~!!!

Anybody using MyFitnessPal? I'm Dixiedragon there if you want to friend me!

Riding - thanks! For a while I was using MFP and had it set on losing 1.5 lbs per week, but that was difficult to maintain. Having it set on 1 lb per week gives me a bit more wiggle room for treats!

I love MFP b/c I can earn extra calories through exersise.

I have lost 44 lbs since January. I had to....was low scale of diabetic and had edema and other issues. I don't really do low carbs but more like a Mediterranean diet if you will. I use olive oil...citrus....full fat butter and cheese but in moderation. I snack on hummus and melon fruit....yogurt, stuff like that. Honestly I'm always eating but it's working. I use whole grain pasta if I crave it....in 1 cup portions. The same with rice except Jasmine rice....it's delicious so I still have that on occasion....but otherwise I use brown rice.

 THIS!!  It is about being accountable to ourselves without deprivation and it helps me to type it out and see it in black and white.

 

I am in La Grange for a couple of days so I am also preparing food for my brother who is very much a meat and potatoes kind of guy and I am a bit limited. Will get back to higher veggie count on Sunday and working out on Monday.

We go out for lunch every Friday and today I got quesadillas, only 3 tortillas so I don't think I went really above what I should be having.

Also a plus is that I didn't have any chips and guac, and they have the best chips and guac ever, so I avoided some carbs there :D

Thanks guys! I am kind of platteauing so need to exercise regularly now....and give beer up. Though sometimes I have liquid calories for dinner lol. I am so lazy so if I can do it anyone can. For real. I have a pic of me at work on Halloween next to one of me for the moodies concert 33 lbs down and it was major difference. Those are my inspiration board!

Oh....I take metformin and a side effect is weight loss but yeah...

I lost a pound this week!

Made this soup. It's a small batch, which is good if you are cooking for one! It makes 3 big servings.

Jennie-O sweet italian turkey sausage (2 links)
2 carrots (chopped)
4 stalks celery, chopped
1/2 onion, chopped
1 heaping spoonful of minced garlic
4 cups chicken stock
Salt
Pepper
1/4 cup dry brown rice
1/4 cup dry lentils

Heat a little oil in a pot. Cook carrots, celery, onion and garlic until tender. Remove casings from sausage and brown the sausage. add the rest of the ingredients. Cook until rice and lentils are done.

I love MyFitnessPal, b/c it really makes me LOOK at what I'm eating.

Example: My soup was about 250 calories, for almost 2 cups. It was really yummy, and it was not a thin broth soup. Chockful of veggies, lentils, brown rice and sausage. 2 Reese's peanut butter cups - 210 calories. Gone in 2 bites. 1 banana - 105 calories.

Ophelia, I do the same thing with carbs. Like I tell DH, limiting my carbs so much makes me think twice about eating carbs that aren't worth it to me which I call garbage carbs.

Des.....I will try and load some pics on my laptop! I. Was bad.....had a piece of cake, two days, in a row....we had a birthday at work yesterday but it was cream cheese frosting dang it. But that's ok.....it's not the whole cake lol.

Banana Oat Cookies

These are pretty good. The need some refining.

Ingredients
2 old bananas
1 cup oats
1/4 cup add in (chocolate chips, nuts, peanut butter, chia seeds, etc)
1 pinch salt

Preheat oven to 350. Mush up banana and add the oats and add ins. Put on a lined cookie sheet. Bake for 15 minutes.

I made these for the first time this morning. Today I used chocolate chips. I got 9 cookies. They don't really change shape or expand like real cookies, so you need to shape them a bit on the tray into what you want the final shape to be.

Taste wise, they are pretty good. I think I might try putting the oats in a food processor next time.

Weighed myself today, I lost 2 lbs. Walked 1.9 miles this morning, which is an increase from 1.2 miles. BTW, there is an app called Map My Walk (also Map My Run) that tracks it for you.

For you low-carbers
Low Carb Rainbow Soup
The original recipe:

My variation:
This soup has 5 net carbs per cup. I found the inspiring online. Google “Low Carb Rainbow Soup” – there are a lot of good ideas in the comments.
1 pound ground meat (I use venison)
1 tablespoon canola oil
1 medium or large onion (yellow or Spanish onions cook better than sweet or white onions)
2 stalks celery, chopped (I’ve used as many as 8 stalks)
4 cloves garlic, minced
1 fire-roasted red pepper (I get these in a jar in the pickle section. They add a really good flavor. Put the extra in the food processor, then freeze in an ice-cube tray. I use 2-3 ice cubes per pot of soup.)
2 carrots, chopped (Carrots are at the high end of the low-carb veggies, or at the low end of the high-carb veggies. I never use more than 2.)
2 bay leaves
1 teaspoon hot sauce (I like Cholula. It has a good flavor and no sugar.)
1 can (15 oz) of Hunt’s Petite Diced Tomatoes (Read the label. Some of the varieties have added sugar.)
1 can (15 oz) green beans, undrained
1 can rutabaga, drained
1 tablespoon Better than Bouillon Beef (or 2-3 beef bouillon cubes)
5 cups water

Heat the oil and cook the onion and celery until tender, about 5-10 minutes. Add the meat and brown. Add garlic, fire-roasted red pepper and carrots; cook for a few minutes. Add the tomatoes, rutabaga, 5 cups water, and Better than Bullion. Simmer for 15 minutes. Add the green beans (including water) and cook until the green beans are heated through.

Freezes well.

The point of this soup is to have a little meat and a lot of low-carb vegetables. I have used yellow squash, zucchini, chopped cabbage and frozen okra.

Variations:
Italian (green bell pepper, oregano, basil, rosemary)
Mexican (chopped green chilis, cayenne pepper, chipotle, cumin)
Lemon pepper or red pepper flakes (add with the meat)

Cheesy Bean Bread
Pumpkin Bean Cake

1 15 oz. can canelli beans or other white bean (drained & rinsed)
4 oz shredded cheddar
4 large eggs
1 tsp. baking powder
2Tbsp oil or melted butter
1/4-1/2 tsp Lawry's Seasoned Salt
(Optional) Herbs, chives or jalapenos

Preheat oven to 350. Mix all ingredients in food processor. Spray 8x8 pan with Pam. Bake for 30 minutes, or until knife comes out clean.

You can also make a surprisingly good chocolate cake with black beans.

Looking over MyFitnessPal nutrition stats, I think I've been inadvertently doing a low-protein diet! So I'm going to really bump up my protein this week. That's not something I've bothered to look at in the past - I figured as a meat-eating american I'm getting lots of protein, but I'm not.

Made this tonight - dad got 3rds!

Low Carb Meatballs with Alfredo Sauce on Spaghetti squash

Meatballs (meat muffins, really) adapted from this recipe:

1 lb ground meat (I used venison)
3 ounces frozen chopped spinach (let it thaw in a colander)
1 ounce fresh basil, chopped
1/3 Parmesan
1 teaspoon salt (preferably garlic salt)
1 egg
1 teaspoon dried oregano
1 teaspoon dried basil

Preheat oven to 400. Mix ingredients. Put mixture into 12 muffin cups. Bake for 20 minutes.

I baked a spaghetti squash in the oven, and crumbled a muffin or 2 over the noodles, then topped with Alfredo sauce. I use the Publix store brand. It is my favorite taste-wise, plus it only has 3 carbs per 1/4 cup.

Made this last night:
Margarita Chicken

It was very good! I love that it didn't have a lot of exotic stuff. It's summer right now so bell peppers are cheaper, but in the winter I get frozen chopped bell peppers for about $1.50/lb at Publix. I had it for breakfast. I made my own salsa b/c I love cilantro and hate raw onion, and it's hard to get salsa from the store like that.

I used California Seasoned Pepper from Penzeys, which has garlic, salt, pepper, onion and dried bell peppers in it.
