Nectarines - I haz many...

The one tree is producing well this year and I have A LOT of nectarines. Any suggestions as to what I should do with them – beyond eating them fresh? I’m particularly interested in making preserves/jam but I’m open to any suggestions. Thanks : )

Smoothie sounds yummy.

I don't have good pie recipes... But I think you could use an apple pie recipe and change the apples for nectarines.

I just made nectarine sorbet. I had about 3 lbs of fruit that I pureed with about 1/2 cup of water in the blender or food processor. Then I added a little agave to sweeten it a little. You could use honey or a simple sugar syrup. Freeze for about an hour then blend again. I froze it in individual servings.

 I did not peel the fruit.  But then again, I don't mind eating the skins of most things that people peel, like potatoes, apples and tomatoes.

I wonder if you could make fruit leather with it? Basically, homemade fruit roll-ups.

I think I'd puree a lot of them and freeze them for winter.

Sorbet or ice cream would be something to try for sure. Aren't they somewhat like peaches? I bet you could freeze them for pies and tarts later this winter if you have the freezer space.

Des - there isn’t that much fruit left on the tree… I will try to post photos of some of the finished products later this week.

I did try the recipe you suggested and it was really good : )

When do you get to taste it? Is it supposed to set up right away or does it take a few days in the jar to get firm? I'm asking because I did watermelon jelly that said it might take up to a week to jell. It never did, but maybe other fruits are more suited to jelly.
