The one tree is producing well this year and I have A LOT of nectarines. Any suggestions as to what I should do with them – beyond eating them fresh? I’m particularly interested in making preserves/jam but I’m open to any suggestions. Thanks : )
I just made nectarine sorbet. I had about 3 lbs of fruit that I pureed with about 1/2 cup of water in the blender or food processor. Then I added a little agave to sweeten it a little. You could use honey or a simple sugar syrup. Freeze for about an hour then blend again. I froze it in individual servings.
Sorbet or ice cream would be something to try for sure. Aren't they somewhat like peaches? I bet you could freeze them for pies and tarts later this winter if you have the freezer space.

When do you get to taste it? Is it supposed to set up right away or does it take a few days in the jar to get firm? I'm asking because I did watermelon jelly that said it might take up to a week to jell. It never did, but maybe other fruits are more suited to jelly.
