if you carve pumpkins do you use any of the pumpkin for anything else?

When my kids were younger we grew our own and they carved theirs and we fed them to the deer, and I had my own for baking.

or some years they just painted them or made designs and those I used for pies breads, muffins etc.

I used to peel and boil and sometimes still do that, but I have been cutting and roasting and that is a nice taste too.

What do you all do with pumpkins?

In the past, we've roasted the seeds. Carving pumpkins were bred to be big, not to be tasty. So if you want a good eating pumpking, you're better off with a pie pumpkin.

I made a black-bean pumpkin soup. To be honest, I didn't care for it, but I don't much like pumpkin. It got a lot of rave reviews. Don't have the specific recipe, but you get lots of hits from Google.

I LOVE this soup:

I have used both sweet potato and butternut squash, but some reviewers mentioned using pumpkin and liking it.

Something else I liked a lot was a stuffed acorn squash. You brown up some ground beef and some onion and seasonings, cooking some rice, stuff the acorn squash and bake. It would probably be yummy in a small pumpkin as well.

Pumpkin is also good for dogs.

The stuffed acorn squash was very good. It wasn't difficult although it does take a while. and it re-heats well.

I used this as the basis for my recipe for cheesy bean bread. Not sure if you're doing low carb.

Something else I did that was yummy was a pumpkin roll up. I don't have the specific recipe, but you can google. You bake a thin pumpkin cake. The texture is similar to a pancake. You make a frosting with cream cheese, then you spread it on the cake and roll the cake.

My mom used to make something like that.... oh the memories

no diet restrictions, more just taste. I love grilling and fresh veggies, not fried or heavy. Just personal choice

I made grilled okra a few weeks ago. It was great! I had never made it before, so I only made a small amount. We were having dinner guests, and I put 1 okra on each plate and told them, "This is a new recipe. If you don't like it, that's fine!" We gobbled them down like popcorn.

Our pumpkins are slightly different than yours, but I make pumpkin pie and this year I'm going to try a new recipe to make pumpkin cake :D
Also my mom and MIL make dulce de calabaza (pumpkin candy) and DH loves it, I never cared for it, but might do that as well.

Ophelia normally I do not care for okra, but grilled maybe, how do you prep it to grill?

Yours are big and orange, ours aren't orange on the outside they are brown but the inside is on the orange side.

Grilled Okra inspiring recipe here:

I didn't have any yogurt, so I didn't do the sauce, but I bet it would be fabulous! I just tossed the okra (whole, no chopping!) in veggie oil (not olive, it burns too easily), salt, pepper and a squirt of lemon juice. Skewer and grill for about 3 minutes per side, until tender.
